Recipe for Tuna steak with chili butter , elder berry and raspberry sauce
Looking to use things in my September garden I just made this recipe up - evrything was picked and cooked fresh in a few minutes - apart from the Tuna and the butter!
Ingredients: 1 or 2 fresh tuna steaks
2 pats of chili butter (pats of butter mixed with chili powder -or half a chopped fresh chili; as much or as little as you like!)
1 head of elderberries
a handful of raspberries
pinch of salt
pinch of sugar
new potatoes
broccoli or other fresh greens
Method;
put the potatoes on to steam first as they will take the longest. when they are almost tender to a knife being stuck in, lob in the broccoli or other greens in the same steamer.
melt the chili butter in a frying pan and put in the tuna steaks, they will cook very quickly, so turn over and try to keep them pink in the middle. scrape off the elder berries from their stalks and put in the rapsberries over the steaks, turn over and let fry a little witha teaspoon of salt and a teaspoon of sugar. tip out onto your hot potatoes and greens - magic!
